Artist Henry, from New York, said: "When you read about the death row inmates they were just names and statistics.
"But once I found out about what they ate as their last meal they began to come to life.
"I could see a little corner of their personality."
Ronnie Lee Gardener, who was killed by firing squad in Utah, munched down on a lobster tail, steak, apple pie and vanilla ice cream while watching the Lord of the Rings trilogy.
Each meal was meticulously restaged by Henry in his studio, with everything down to the table cloth and cutlery matching the era of the execution.

A condemned prisoner's last meal is a long-standing tradition in
the US and recent research has argued that what death row inmates order
can be an accurate reflection of their state of mind prior to being put
to death.
Researchers at Cornell University argued those who genuinely believe they are innocent of the crimes for which they have been put to death are likely to order substantially less - or even avoid their last meal altogether.
In contrast those who have accepted guilt for their crimes ask for a third more calories in their final meal on average.
In 2012 Gart Carl Simmons Jr asked for: one Pizza Hut medium Super Supreme Deep Dish pizza with double portions of mushrooms, onions, jalapeno peppers, and pepperoni, a second pizza with three cheeses, olives, bell pepper, tomato, garlic, and Italian sausage, 10 packs of Parmesan cheese, 10 packs of ranch dressing, one family size bag of Doritos nacho cheese flavour, jalapeno nacho cheese, sliced jalapenos, two large strawberry shakes, two cherry Cokes, one super-size order of McDonald's fries with extra ketchup and mayonnaise, and two pints of strawberry ice cream.
